Easy Soup Maker Carrot and Coriander Soup

I love Soup Season!

There is nothing cosier than a warm bowl of soup on a chilly autumn day. This soup maker carrot and coriander soup is my go-to recipe this season. It needs just five simple ingredients, and you can have lunch ready in about 25 minutes.

Best of all, my new Tower Homeware soup maker does almost all of the work. I simply chop, add, press a button and pop the kettle on. Then I come back to silky, golden soup.

Why I Love My New Tower Soup Maker

My new Tower Homeware 1.6 Litre Vizion Soup Maker has earned a permanent spot on my kitchen worktop. It looks smart, it is easy to clean, and it cooks and blends in one jug. That means no hob to watch and no extra pans to wash.

If you have never used a soup maker before, here is how it works. You add your chopped vegetables and stock, choose a setting, and it heats and blends everything for you. It really is that simple.

I personally love to make vegatable soups, things like carrot and corriander or parnsip and curry, and have a soup maker makes it so simple and easy.

Ingredients for Carrot and Coriander Soup

Serves 4. Prep time 10 minutes. Cook time about 25 minutes.

  • 500g carrots, peeled and chopped
  • 1 medium onion, peeled and chopped
  • 750ml hot vegetable or chicken stock
  • A small bunch of fresh coriander (about 15g), stalks and leaves
  • Salt and black pepper, to taste

These amounts suit most 1.6 litre soup makers. Always check the MIN and MAX lines on your jug and adjust the stock to fit.

How to Make Carrot and Coriander Soup in a Soup Maker

  1. Prepare the vegetables. Peel and roughly chop the carrots and onion. Smaller pieces blend more smoothly, so aim for chunks about 2cm across.
  2. Chop the coriander. Roughly chop the stalks and most of the leaves. Keep a few leaves back to garnish.
  3. Fill the jug. Add the carrots, onion and coriander to the soup maker. Pour in the hot stock, staying between the MIN and MAX lines.
  4. Choose the smooth setting. Pop the lid on and select the smooth soup programme. Your soup maker will now heat and blend the soup for you.
  5. Season and serve. When the programme finishes, taste the soup. Add salt and pepper, then stir and pour into warm bowls.

Tips for the Best Soup Maker Carrot and Coriander Soup

  • For a creamier soup, stir in a splash of single cream or a spoonful of crème fraîche before serving.
  • For a little warmth, add a pinch of ground cumin or a thumb of fresh ginger with the vegetables.
  • For a thicker soup, use a little less stock. For a thinner soup, simply add more.
  • To serve, top with a swirl of cream, a few coriander leaves and some crusty bread.

Storing and Freezing

This soup keeps well in the fridge for up to 3 days in a sealed container. It also freezes beautifully for up to 3 months. Defrost it overnight in the fridge, then reheat gently until piping hot.
