Really simple baking
Here is a really simple Flapjack Recipe all made from store cupboard ingredients… I can’t however guarantee that it is low in calories!
In 2015, I went to a food photography workshop in Cornwall with my friend Roberta who was over from Canada. The course was arranged by Melissa Love and was run by Food Photographer Danielle Acken who is Canadian.
Cake is the ANSWER, no matter the question
It really was a fabulous weekend and I got to meet some really AWESOME Women who have remained friends long after we all headed home on the Sunday.
One of the highlights of the trip was a trip to the Eden Project to photograph their wonderful food and one of my favourite things was their dried fruit flapjacks.
If you’ve never been to the Eden Project or Cornwall I can highly recommend both, even if I did nearly choke to death and was saved by my friend!
On returning home I found this recipe by Simon Rimmer, it really is a super simple recipe, and a great recipe to involve the children in.



Their RECIPE

The ingredients…
150g/5oz Butter – creamed 80g/3oz soft light brown sugar 80ml/3oz clear honey 250g/9oz rolled oats 80g/3oz dried cherries 80g/3oz dried cranberries 1 tbsp desiccated coconut 50g/20z hazelnuts, shells removed and chopped
The Chocolate Sauce
The Method
Preheat the oven to 180c/360F/Gas4 Melt the butter, sugar and honey together in a pan over a medium heat. Add the rolled oats, dried cherries, dried cranberries, desiccated coconut and chopped hazelnuts. Pour the Flapjack mixture into a greased 30cm/12″ x 20cm/8″ square baking tim. Press the mixyure into the corners and smooth the top. Place in the oven and bake for 20 minutes. Turn on the tin and cut into equal pieces whilst still warm For the chocolate dripping sauce, heat the cream in a pan until warmed through. Stir in the chocolate pieces and allow to melt and stir until smooth, and then stir in the brandy. Serve the flapjacks with the dipping sauce on the side in a small bowl
